6.Application Scope and Recommended Dosage:
This product is specially designed for foods that require improved water retention without using phosphates.
Application Scope
Meat Products: Marinated meats such as chicken breast, steak, pork and lamb. Low-temperature meat products such as ham, sausage and roasted meat.
Aquatic Products: Surimi products(fish balls, fish tofu), frozen fish fillets, shrimp and shellfish.
Others: Fillings for quick-frozen dumplings and steamed buns.
Recommended Dosage
Injection/Tumbling:
Prepare a 10%-15% injection brine solution
The Injection rate is typically10%-25%
Add this product at 0.3%-0.8% of the brine solution weight.
Marinating /Soaking:
Prepare a marinating solution with a concentration of 2.0%-3.0%.
Soaking time depends on product size and specific process requirements.
Direct Mixing/Emulsifying:
Add directly at 0.3%-0.8% of the total raw ingredient weight
The optimal dosage should be determined through trials based on the specific product
7.Recommendations for Application Method:
Dissolution: Fully dissolve this product in an appropriate amount of cold water or ice water to make a solution
Injection/Tumbling:Uniformly inject the solution into meat pieces using an injection machine, then perform vacuum tumbling to ensure the solution is evenly distributed in thee muscle tissue
Marinating/Soaking:Submerge the raw materials completely in the prepared marinating solution to ensure uniform contact
Mixing:Add this product together with other auxiliary materials during the the chopping or mixing process, and stir evenly.
Proceed with the regular production process as usual.
8.Storage and Packaging:
Storage: Keep in a cool, dry and well-ventilated place with tight sealing. Avoid direct sunlight.
Shelf Life: 24months under the specified storage conditions.
Packaging Specifications: 25kg/bag, or customized according to customer requirements. Packed with an inner food-grade polyethylene plastic bag and outer multi-layer paper bag or fiber drum.
9.Precautions:
Not intended for direct consumption.
Appropriate personal protective equipment, such as gloves and a dust mask should be worn during handling.
