2.DESCRIPTION:
The Mix series are one of the emulsifying salts, a mixture of phosphates, For cheese ofwhich flavor, texture, body and color can be improved by making dispersion ofingredients in the cheese such as protein, fat and oil Moisture and so forth better. Thisimprovement comes from the ion exchange capacity, creaming effect and adjusted PHof mix series on the manufacture of cheese.

4.APPLICATION:
It is a melting salt designed for the production of block processed cheese withenhanced remelting properties. It used as a single ingredient tends to increasethe PH by 0.2-0.4 unit.The recommended addition rate is approx 1.0-2.0% calculated on the rawmaterial to be processed.
